The Hounds Claws

  • 12 jumbo prawns, peeled and deveined, tail on
  • 2 cups crispy puffed quinoa
  • 1-1/2 teaspoon cornstarch
  • 2 tablespoons oyster sauce
  • 1 tablespoon lemon juice
  • 1-1/2 teaspoons soy sauce
  • 3/4 cup flour
  • 1/2 cup corn flour
  • 1/4 teaspoon baking powder
  • 3/4 cup olive oil
  • 3/4 cup water
  • To taste salt and pepper
  • For frying vegetable oil


  • 1 In a medium bowl, combine soy sauce, oyster sauce, lemon juice, and salt and pepper. Brush on each shrimp and refrigerate 25 minutes.
  • 2 Using a separate bowl, combine flour, corn flour, baking powder, olive oil, water and salt and pepper (to taste). Whisk together until a nice batter forms. Set aside.
  • 3 In a separate bowl, place puffed quinoa and set aside.
  • 4 Using a wok or skillet, heat up frying oil. When hot, begin dipping each shrimp first in batter then in the puffed quinoa and fry over medium heat until golden brown. When done, set out over a paper-toweled plate to absorb excess oil.
  • 5 Platter, serve and enjoy!
