Lump Crab & Avocado Sandwich by Andrea Correale

Avocado is as healthy as it is satisfying – that is why this recipe is one of my favorite summer go-tos.

2 slices multigrain bread

1 ripe avocado

4.25 oz. lump crab meat

ΒΌ lb. micro greens

1 bunch red radish

pinch of salt

splash of lemon juice

 

Begin with 2 slices of your favorite multigrain bread. Toast if you like a little extra crunch.

Cut avocado in half.

Slice half the avocado lengthwise.

Place other half in a bowl with a pinch of salt and a splash of lemon juice – mash into a spreadable consistency.

Spread heart healthy mashed avocado onto whole grain bread.

Top with avocado slices, lump crab meat and your favorite micro greens.

Optional – add sliced red radish for a fresh spicy kick.

 

Makes 2 sandwiches
