2 english cucumbers – 14 inches or longer
¼ cup kalamata olives – chopped
3 roma tomatoes – small diced
½ red onion – small dice
2 oz feta cheese – crumbled
2 sprigs dill – chopped
1 tablespoons red wine vinegar
3 tablespoons olive oil
HOW TO PREPARE:
Cut cucumber into 1 inch rounds. With a melon baller, scoop out the center of the cucumber, making sure not to go all the way through the bottom.
In a small bowl mix Kalamata olives, tomatoes, red onions, feta cheese, dill, vinegar and olive oil.
When ready to serve fill cucumber cup with mixed salad. Place on platter and enjoy the cucumber cups recipe.
