Ingredients
- 1 lb pasta
- 5 Tbsp. extra-virgin olive oil
- 1 onion
- tsp. crushed red pepper flakes
- 1 bunch broccoli rabe
- cup heavy cream
- 3 cups shredded cheddar
- 1 cup chopped chives
- 1 cup panko breadcrumbs seasoned
Directions
Preheat oven to 425°. Bring a large pot of salted water to a boil. Cook pasta al dente. Drain pasta, reserving 1 cup pasta cooking liquid. Heat 5 Tbsp. oil in a pot over medium-high. Add chopped onions and season with salt and black pepper. Cook until soft. Add red pepper flakes and stir to incorporate. Add broccoli rabe, season with salt and black pepper, and cook until wilted. Remove pot from heat and set aside. Add pasta to broccoli rabe mixture along with cream, three-quarters of the cheese, ½ cup chives, and reserved pasta cooking liquid; mix well. Season with salt and black pepper and some more red pepper flakes. Transfer pasta to a baking dish. Mix panko and 3 Tbsp. oil in a separate bowl. Sprinkle it over pasta, along with the remaining cheese. Bake until pasta is bubbling and breadcrumbs golden brown. Approximately a half-hour.
