This arugula spread is easy to make super healthy and delicious. Use it as a dip with your favorite bread, flats, crisps, or veggies, or use it as a spread on a wrap or sandwich
Ingredients for Arugula Pesto
1 can (800g | 28oz) chickpeas/garbanzo beans, rinsed and drained
1 cup baby Arugula
2 Tbs lemon juice
2 Tbs tahini paste
3 garlic cloves, mashed
3 Tbs extra virgin olive oil
Salt & Pepper ( to taste)
water as needed
Add all ingredients to your food processor.
Mix on medium to high speed until smooth.
Use as a dip, or as a spread on a sandwich or wrap to complement any protein.
