CBD might just be the buzziest word of 2019—as such, it’s being used as an ingredient in just about everything you can imagine, from skincare and supplements to desserts. It was only a matter of time until it became part of the wedding world, too. First and foremost, what is CBD? Short for cannabidiol, CBD is one of the naturally-occurring compounds found in the cannabis plant, otherwise known as marijuana. Unlike its counterpart, tetrahydrocannabinol (THC), it does not provide the feeling of being “high,” but instead only provides relaxing and anti-anxiety benefits that can be therapeutic for many individuals. Recently, it’s become a popular addition to many different types of food and drink.

Andrea Correale, celebrity caterer and founder and president of Elegant Affairs, has noticed an increase request for CBD-infused food and drinks, so she recently began offering a few different options to her clients. One of her favorite places to include CBD-infused bites? Appetizers. She likes infusing the ingredient into classics like mini lobster rolls, grilled cheese bars, and even suhu shrimp for a crowd-pleasing take on the trend. If you’re thinking about adding a few appetizers infused with CBD to your wedding menu, her tips will help you do it right.

If you’re considering having a CBD-infused appetizer at your wedding, you probably have a lot of questions, including how much CBD is enough and how much would be considered too much? Of course, you can incorporate CBD into both your appetizer and your entrée, but Correale warns that it might overkill—just like putting truffle oil on everything on your menu would be too much. Instead, she suggests opting for one or the other—either adding a few CBD-infused options to cocktail hour or to the main meal. If you’re not interested in adding it to the food, you could offer a CBD cocktails, mocktails, or coffee drink.

“The CBD should be infused in some kind of fat or oil, if possible,” she explains. “That way, you could cook with it easily and it also covers up any bitter taste.” The easiest foods to infuse CBD in are sweets, so cookies and cakes are great options, but if you’re looking for cocktail hour options, she recommends pizza, salad dressings, a scampi dish, or anything made with butter. To ensure that guests aren’t tasting the CBD itself in the food, she suggests using strong flavors or seasonings, as the ingredient can be a bit bitter.

Last but not least, if you are incorporating CBD into any of the appetizers, it’s essential that you inform your guests with a large sign at the very least—and perhaps also having each cocktail server inform the guests about what they’re being offered. “Even though the part that gets you high (THC) is most often not used with CBD, it is imperative that you let guests know, in case they are against it,” Correale adds.
